Ok, so I didn’t even realize that it was “Chocolate Covered Anything Day today until about 2 pm, lol, but as it turns out, I chocolate-covered something first thing this morning anyway!
I went about making a green smoothie – attempting to recreate the best smoothie I ever made, but something went horribly wrong! First of all, I had only like 1 1/2 leaves of chard left, so I made up the difference to 80g (my ‘usual amount’ of greens) with red leaf lettuce. Is a healthy green right? Right. WELL, red leaf lettuce has a totally different taste, and so the finished product was very green tasting.. more so than I thought was tasty-ful. What to do? Hrm. I added another banana. Nope. Added a 1/2 tsp of vanilla and some stevia. Yay it worked!
Except…. now it’s REALLY sweet. Like… almost… unpalate-ably sweet. DANG! The last of my chard, the last of my lettuce… waste of fruit… *sigh*. I decided to drink it anyway, is good for me right? Right.
As I was having my first few sips (wincing at the sweetness, no lie.), I began to think, How can I temper this too sweet flavor!? *lightbulb shines over my head* CHOCOLATE! I went and added a 1/2 tsp of unsweetened cocoa powder to my glass and mixed it up and….. It was PERFECT! I LOVED it and I am so happy this happened NOW, because now I know to add just a dash of chocolate for a lovely different smoothie-treat! Yay!
For my chocolate-covered-day dinner, I chose to have spaghetti squash a-la-gravy (homemade, thrown together gravy, I haven’t even got a recipe LOL), steamed broccoli w/nooch and Gardein beefless tips. Let me just share with you that the beefless tips are right up there with Butler soy curls. They are rockin! You must try
I haven’t had them in awhile, due to lack of grocery budget, but I just got paid and when the Beebits and I went to get our WIC foods today I saw that it was on sale – so I splurged, the Beebits chose a package of cripsy tenders and I got the tips. SOOOO good! I tell you, Gardein has really nailed it with a good faux ‘meat’, AND it’s pretty healthy too, as processed food goes, non-gmo soy, ancient grains for fiber and protein…. TWO THUMBS UP Guys!

He loves to mix.. he says "I do it too Mommy!" or "I help Mommy!"

For the record, he is NOT allowed to help “COOK” them, he only gets to watch the stove part. He was ONLY counting the cooking ‘cakes.

And for dress up…I had my tennies sitting out frmo when I’d attempted to do a workout DVD (which was unsuccessful, because the Beebits freaked out when I tried to follow the gal on the screen?!?!? Weirdo!) so he put them on and marched around in them for awhile. I crack up when he goes clomping around in my size 10′s!! Hahahaa!
