AND… what special package arrived for me ON Christmas Eve???? I got a mysterious package… I had ordered a little toy for the Beebits for Christmas but the box seemed the wrong size? Guess what I found inside??
I was totally unexpecting this one too! I emailed Premier Organics about perhaps getting samples or coupons – since I’d LOVE to try their organic nut butters, but they’re sooo expensive! – (I told them how I always hear about their yummy products on CCK too *giggle*). I heard back from them that sure they’ll be happy to send something… well… I responded with my address but then I didn’t ever hear back again… so I was totally shocked to get the package! There weren’t any coupons, but there’s a sample of EVERY Artisana variety they sell! Agggghhhh! OMG I’m so excited.
I am saving them til I know EXACTLY what I want! I’ve been out of coconut butter for a long time, like months! I’ll let you know what I do with them!!
In more food news… this morning I had a RIDICULOUS craving for tofu. I mean, like crazy craving. SO, I scrambled a WHOLE block of (pressed) firm tofu… I scrambled it with some of my seasoning and a little tamari today.
P.s. – while I’m breaking apart my tofu into the pan, the Beebits come over and says “I need tofu, Mommy”… so I just break off a hunk and hand it to him and he munches happily on plain firm tofu. I have tried it. I can’t do it. LOL. But he loves the stuff! I don’t even have to marinade for him!
Then I sauteed some mushrooms and yellow bells w/ just some herbs and salt and then piled them all together on my plate for a yummy scramble breakfast! (Note: I did keep out half the scramble and half the veggies to eat later today! LOL)

OMG the yellow bells were on sale for like $.79 each or some crazy good price at Henry's last week so I grabbed 2! Delish!
To top if off, I have a soy latte, my new FAV recipe (yes, even though the cup is a coffee shop cup, it’s just cause I reuse it lol, the latte is homemade!:)) And I almost never drink it hot. Even when it’s cold outside.. I don’t know why, I just don’t prefer hot drinks… not hot tea either, it’s always iced!
Iced Vanilla Soy Latte
- 10 oz organic vanilla soymilk (or other non-dairy milk)
- 6-8 oz espresso strength ‘coffee’ (I use an Aeropress, but I just make really strong coffee with it, not truly espresso so my coffee beans go farther lol)
- 30 drops liquid stevia ( currently using Kal brand because I got some for Christmas, thanks mom!)
- 1/2 – 1 tsp vanilla extract (I like it really vanilla-y!)
- (Optional) dash cinnamon and/or nutmeg for a spiced latte!
Mix all ingredients in a cup with 4-5 ice cubes – you’ll need more ice cubes if your coffee is fresh and hot! Enjoy! YUMMERS!
AND FINALLY, for some pre- and post-Christmas cuteness…

This is just funny... we did pancakes and this is the Little lego 'boy' with his little tiny pancake... Hilarious!
And then we made oatmeal raisin cookies for Santa… and the Beebits helped (of course)!
And most of the ‘opening’ happened at Meema and Beebpa’s house but I don’t have those pics yet, so, for the lil bit that happened at home…
Now on towards New Years! Ack! I can’t believe it’s oging to be 2011 already. *whew*!! I sure hope 2011 turns out better for the Beebits and I than 2010 has turned out to be. I already have some resolutions too – I’ll post about that soon promise!
